Q. Whilst reading a French travel magazine several years back, I saw mention of a Gateau Charentais, a specialty of the Charentes region of France. A. Gateau Charentais === 4 eggs sugar flour 100g almonds, finely chopped 50g almonds, coarsely chopped Weigh the 4 eggs, and take their combined weight in sugar and flour. Separate the eggs, and beat the 4 yolks with the sugar until the mixture pales completely. Add the sifted flour in small quantities at a time. Next, in a separate, completely grease free bowl, whisk the egg whites to soft peaks. Fold in, followed by 100g of the chopped almonds. Decant the mixture into a buttered mould. Sprinkle the surface of the mixture with the remaining 50g, coarsely chopped almonds. Dust with icing sugar Bake in a moderate oven for 20 minutes. Gateau Charentais === Peser 4 oeufs et prendre meme poids de sucre et de farine. Battre les 4… [cont.]

Which RN specialty is the most in demand and the highest paid?
Q. Hi everyone! I'm about to go back to school to get my Associate's degree in Registered Nursing (RN) so I can eventually be a travel nurse, which is my dream job. My question to you is which RN specialty is the most in demand and the highest paid? Also, many travel agencies say to have at least one year's experience in acute care. But what does this mean? Also, what is the application process like when getting new RN licensure in different states when travelling to new, different RN assignments? Is it easy or hard? Any answers would be greatly appreciated. Thanks!

A. At the hospital where I work, we most frequently use traveling nurses in the Operating Room, Emergency Department and Critical Care. Acute care means one year experience in an inpatient setting in a hospital. Again, it would be best for you to gain experience in the area where you wish to work as a "traveler". However, it is extremely difficult to "break into" jobs in the OR, ED and CCA. My hospital would NOT employ a traveling nurse in the OR or any other area who did not have experience in that specific area. Licensure: You would need to apply for an RN license in each state where you would want to work. That can be expensive as there are fees associated with application.
